Easy Peasy Treats! ~ Light & Puffy Cheese Tri-Bites


It doesn't get any easier than this super quick recipe.

One day I was having a really lazy morning; I pretty much stayed in bed all morning, tucked under my pristine, newly changed bedsheets and browsing through a few blogs I encountered on my Twitter feed. By the time I got out of bed, it was the afternoon and I hadn't eaten anything yet! 

I was still pretty lazy by the time I was in the kitchen, so cooking wasn't an option for this particular day. All I had in my cupboard was chickpeas, lentils and a tonne of different pastas and gnocchi, which all required some sort of standing around and cooking, which I just really didn't want to do... plus I wasn't craving a heavy pasta meal.

What was I to do? It was just one of those days where I wasn't sure what would satisfy both my hunger and tastebuds. My thoughts started to approach dangerous waters... What if I just get a takeaway? I mean, Pizza Hut delivery is already open...

In the frantic hope that I would redeem my sanity for living a healthier lifestyle, I opened the treasure chest of food, the almighty shrine that centres a kitchen's purpose, the royalty of a foodie's humble home... 

The fridge.

And there they were; laying on my half of the bottom shelf were the ingredients I needed for a light, late breakfast snack...

Light & Puffy Cheese Tri-Bites

These triangular bites of light, cheesy goodness are perfect finger foods! They are so easy and require minimal cooking effort - plus they are pretty damn satisfying! They're puffy, crispy, and taste even better when dipped into hummus!


Ingredients:

1 ready rolled puff pastry sheet
Philadelphia cheese spread (full fat, light... depends on what you like!)
grated cheddar cheese
garlic granules
fresh parsley leaves

Method:

  1. Preheat the oven at 180 degrees.
  2. Roll out the puff pastry sheet. You don't need to do this on a floured surface; just simply roll it out and keep it in the greaseproof paper it was in.
  3. Spread the Philadelphia cheese spread all over the pastry. You're allowed to be super generous with this step.
  4. Here comes a little bit of geometry... Cut the pastry into long rectangular strips lengthwise, then do the same widthwise so that the pastry is cut into multiple squares.
  5. Without ruining the original shape of the pastry sheet, cut the pastry into triangles by slicing the individual squares in half diagonally.
  6. Sprinkle the grated cheddar cheese and garlic granules everywhere. There is never too much cheese.
  7. Place the triangular pastry pieces on lightly greased greaseproof paper (or foil)  lined in an oven tray.
  8. Take the fresh parsley leaves and place one on each triangle. This adds a nice pop of colour as well as a mild bitterness that acts as a nice garnish to the rich cheesiness of the tri-bites.
  9. Pop the tray into the oven for 8-10 minutes at 180 degrees. Remember to keep checking on the tri-bites; they're small and delicate so they can easily get burnt!
